No-Knead Bread

If you're like me, you want that breadmaking to be easy and simple. If this is you, then you must watch this video clip! Mark Bittman is the chef who writes for the New York Times. He visited a NY bakery to learn an incredibly simple, quick way to make bread (quick meaning takes little of your time - you actually do let the dough sit for a day). In the column for the NY Times he writes that this works for whole grains even though the video shows white flour. Now I have to say that I have only made this once and I totally messed up (I used the speedy recipe ingredients for the regular recipe instructions) and it was still really good bread. I also used the white flour recipe for my first time but I did 2 parts white flour to 1 part whole wheat flour -- still very good bread despite all of these changes! I used a cast iron dutch oven that I have for camping to cook the bread in.

Video - from You Tube and the link to the NY Times story from 2006. (Recipe)

Happy bread making!
